  • 1/2 cup cooked chickpeas, drained and rinsed
  • 1/2 cup cucumber slices, fresh and crisp
  • 1/2 cup baby carrots, peeled
  • 1/2 cup apple slices (preferably crisp variety like Honeycrisp), thinly sliced
  • 2 tablespoons roasted pumpkin seeds, lightly salted
  • 68 whole grain crackers (or gluten-free rice cakes/crispbread)
  • 1/4 cup fresh cherry tomatoes, halved
  • 1 teaspoon lemon juice (to prevent apple browning)
  • Pinch of sea salt (optional)

Instructions

  1. Wash all fruits and vegetables thoroughly.
  2. Slice cucumber into thin rounds and peel baby carrots if needed.
  3. Thinly slice the apple and toss immediately with lemon juice to prevent browning.
  4. Halve the cherry tomatoes and pat dry.
  5. Drain and rinse canned chickpeas, then pat dry with a paper towel.
  6. Scoop about 2 tablespoons of sunflower seed butter into a small container or silicone cup.
  7. Arrange cucumber slices, baby carrots, apple slices, cherry tomatoes, and roasted pumpkin seeds in separate compartments.
  8. Place chickpeas near the sunbutter for a satisfying pairing.
  9. Add whole grain crackers last, ensuring they don’t touch moist items to stay crisp.
  10. Sprinkle a pinch of sea salt over chickpeas and pumpkin seeds to enhance flavor.
  11. Close the bento box securely and serve chilled or at room temperature.
