  • 1/2 cup honey
  • 1/3 cup coconut oil, melted (or olive oil)
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups grated zucchini (about 1 medium zucchini, squeezed to remove excess water)
  • Optional add-ins:
  • 1/2 cup chopped walnuts or pecans (toasted)
  • 1/4 cup unsweetened shredded coconut
  • 1/3 cup raisins or chopped dates

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line with parchment paper.
  2. Grate zucchini finely and squeeze out excess moisture using a clean kitchen towel.
  3. In a large bowl, whisk together whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg if using.
  4. In another bowl, beat eggs lightly. Stir in honey, melted coconut oil, and vanilla extract until smooth.
  5. Pour wet ingredients into dry ingredients and gently fold with a rubber spatula until just combined; do not overmix.
  6. Fold in grated zucchini and any optional add-ins like nuts, coconut, or dried fruit.
  7. Pour batter into prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, checking doneness with a toothpick inserted in the center. Tent with foil after 40 minutes if top browns too fast.
  9. Cool bread in pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

Squeeze zucchini well to avoid soggy bread. Do not overmix batter to keep bread tender. Tent with foil if top browns too quickly. For gluten-free, substitute almond flour and add extra egg or flaxseed meal. For vegan, replace eggs with flax eggs and honey with maple syrup.
