  • 1/2 cup (115g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (30g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream or whole milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line your muffin tin with liners or grease it well.
  2. In a small bowl, beat together 8 oz softened cream cheese, 1/4 cup powdered sugar, 1 teaspoon vanilla extract, and 2 tablespoons heavy cream until smooth and fluffy. Set aside.
  3. In a large bowl, mash 3 ripe bananas until almost smooth but leaving a few lumps for texture. Stir in 1/2 cup melted butter and 3/4 cup sugar until combined.
  4. Beat in 2 large eggs one at a time, then stir in 1 teaspoon vanilla extract.
  5. In a separate bowl, whisk together 1 1/2 cups flour, 1 teaspoon baking soda, 1/2 teaspoon salt, and optional 1/2 teaspoon cinnamon.
  6. Gently fold the dry ingredients into the wet banana mixture using a spatula. Stop as soon as flour streaks disappear to keep the muffins tender.
  7. Spoon a generous tablespoon of batter into each muffin cup, filling about halfway.
  8. Using a spoon or piping bag, place about a teaspoon of the cream cheese filling into the center of each muffin cup, on top of the banana batter.
  9. Cover the cream cheese filling with another tablespoon of banana batter, ensuring the filling is fully enclosed.
  10. Bake for 20–25 minutes until muffins are golden on top and a toothpick inserted outside the filling comes out clean.
  11. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use overripe bananas for best sweetness and moisture. Do not overmix the batter to keep muffins tender. Chill cream cheese filling if it oozes during baking. Avoid overbaking to maintain moist texture. Muffins can be frozen individually wrapped for up to 3 months.
