Instructions

  1. In a mixer bowl, beat 1 cup softened unsalted butter and 1 cup granulated sugar on medium speed until creamy and fluffy, about 3-4 minutes.
  2. Beat in 1 large room temperature egg and 1 teaspoon pure vanilla extract until combined. Scrape down the bowl to mix evenly.
  3. In a separate bowl, whisk together 3 cups all-purpose flour, 1 teaspoon baking powder, and 1/4 teaspoon salt.
  4. Gradually add the flour mixture to the butter mixture on low speed, mixing just until a soft dough forms. Avoid overmixing.
  5. Divide dough into 2 discs, wrap in plastic wrap, and refrigerate for at least 1 hour or up to 24 hours.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
