A quick and easy homemade summer drink combining fresh strawberries, lemon juice, sugar, and ice for a refreshing, sweet-tart slushie perfect for hot days.

Ingredients

Scale
  • 1 1/2 cups fresh strawberries, hulled and quartered
  • 1/2 cup fresh lemon juice (about 3 lemons)
  • 1/4 cup granulated sugar
  • 1 cup cold water
  • 3 cups ice cubes, slightly crushed
  • 1/2 cup sparkling water (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Macerate the strawberries with granulated sugar in a medium bowl for about 5 minutes until glossy and juicy.
  2. Juice about 3 lemons to get 1/2 cup fresh lemon juice, strain to remove seeds and pulp.
  3. Lightly crush the ice cubes with a rolling pin or pulse in the blender for a few seconds.
  4. Add the macerated strawberries (including juices), lemon juice, and cold water to a high-speed blender and blend on high until smooth and vibrant pink.
  5. Add the crushed ice cubes to the blender and blend or pulse on high until thick and slushy. Add more cold water or sparkling water if needed to adjust consistency.
  6. Taste and adjust sweetness by adding a teaspoon of sugar or honey if desired, blend briefly again. Add more lemon juice for extra tang if preferred.
  7. Pour into tall glasses, garnish with fresh mint leaves or sliced strawberries, and serve immediately with a straw.

Notes

If blender struggles with ice, blend liquid ingredients first then add ice in small batches. Use ripe strawberries for best flavor. Frozen strawberries can be used to make the slushie thicker and colder but reduce ice accordingly. Adjust sweetness last to taste. Add sparkling water gently for fizz. Prepare base ahead but blend ice just before serving for best texture.
