  • 1 ½ cups (225g) frozen mango chunks
  • 1 ½ cups (225g) frozen pineapple chunks
  • 1 cup (240ml) full-fat canned coconut milk
  • Juice of 2 medium limes (about 3 tablespoons / 45ml)
  • 1 to 2 tablespoons (15-30ml) honey or agave syrup
  • 1 cup (240ml) ice cubes
  • For the Lime Cream Float:
  • ½ cup (120ml) heavy cream
  • 1 tablespoon (8g) powdered sugar
  • 1 teaspoon lime zest
  • 1 tablespoon (15ml) lime juice

Instructions

  1. Chill a mixing bowl and whisk in the fridge for about 10 minutes.
  2. Pour ½ cup (120ml) heavy cream into the chilled bowl. Add 1 tablespoon (8g) powdered sugar, 1 teaspoon lime zest, and 1 tablespoon (15ml) lime juice.
  3. Whisk or beat on medium speed until soft peaks form (3 to 5 minutes). Set aside in the fridge to keep cool.
  4. In a high-speed blender, combine frozen mango chunks, frozen pineapple chunks, coconut milk, fresh lime juice from 2 limes, honey or agave syrup, and ice cubes.
  5. Blend on high until smooth and frosty, about 1 to 2 minutes. Adjust thickness by adding more coconut milk or ice cubes as needed.
  6. Taste and adjust sweetness or tartness by adding more honey or lime juice, then blend briefly again.
  7. Pour the frozen mocktail base into tall glasses, leaving room at the top for the lime cream float.
  8. Gently spoon or pour the lime cream float over the top without mixing to maintain the layered effect.
  9. Garnish with a lime wedge or a sprinkle of lime zest and serve immediately with a straw or spoon.

Notes

For a dairy-free lime cream float, substitute heavy cream with chilled coconut cream or cashew cream and use powdered or coconut sugar. Whip cream to soft peaks for best float texture. Keep the mixing bowl chilled to help the cream whip faster and stay stable. If the lime cream float softens too quickly, chill the glasses in the freezer for 5 minutes before serving.
