Refreshing Healthy Coconut Mango Lime Popsicles

These popsicles combine creamy coconut milk, sweet mango, and tangy lime for a refreshing, healthy summer treat that’s quick and easy to make.

  • 2 cups ripe mangoes, peeled and chopped
  • 1 cup (240 ml) full-fat coconut milk
  • 2 tablespoons fresh lime juice
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Peel and chop about 2 cups (approximately 300 grams) of ripe mangoes into chunks. If using frozen mango, thaw slightly for easier blending.
  2. Add the mango chunks, 1 cup (240 ml) of full-fat coconut milk, 2 tablespoons (30 ml) of fresh lime juice, 2 tablespoons (30 ml) of honey or maple syrup, 1 teaspoon (5 ml) of vanilla extract, and a pinch of sea salt into your blender. Blend until smooth and creamy, about 1-2 minutes. The mixture should be thick but pourable.
  3. Taste the mixture and adjust by adding more lime juice or sweetener if desired. Blend again if you add anything.
  4. Pour the mango-coconut mixture into popsicle molds, leaving a little space at the top to allow for expansion as they freeze. Insert the sticks and place the molds on a baking sheet for stability.
  5. Freeze for at least 6 hours or overnight until solid.
  6. To unmold, dip the molds briefly in warm water for 10-15 seconds and gently pull the popsicles out. Serve immediately or store in a freezer bag for up to 2 weeks.

Notes

Use ripe mangoes for best flavor and sweetness. If popsicles are icy, blend the base longer or add a splash more coconut milk. To unmold easily, dip molds in warm water briefly. Adjust sweetness and lime juice to taste. For vegan version, use maple syrup instead of honey.
