A quick and easy watermelon mint slushie with a spicy, tangy Tajín rim that’s perfect for hot summer days. This icy drink balances sweet watermelon, fresh mint, and a zesty Tajín kick for a refreshing treat.

  • 4 cups (600 grams) fresh seedless watermelon chunks
  • 1012 fresh mint leaves
  • Juice of 1 lime (about 2 tablespoons or 30 ml)
  • 12 tablespoons (1530 ml) simple syrup or honey (optional)
  • 2 cups (about 480 ml) ice cubes
  • 2 tablespoons Tajín seasoning for rim
  • 1 teaspoon coarse salt (optional, mixed with Tajín for rimming)

Instructions

  1. Pour the Tajín seasoning onto a small plate. If desired, mix with coarse salt. Moisten the rims of your glasses with a lime wedge, then dip the rims into the Tajín mixture. Set aside to dry (about 5 minutes).
  2. Cut the watermelon into chunks, removing seeds if any. Wash and pat dry the mint leaves (about 10 minutes).
  3. In a blender, add watermelon chunks, fresh mint leaves, lime juice, and optional sweetener. Blend on high until smooth. Add ice cubes and pulse until thick and icy. If too thick, add a splash of cold water or coconut water to blend smoothly (about 5 minutes).
  4. Taste and adjust flavors by adding more lime juice or sweetener if needed. Blend briefly again (about 2 minutes).
  5. Pour the slushie into prepared glasses carefully to preserve the Tajín rim. Garnish with a fresh mint sprig or small watermelon wedge if desired. Serve immediately (about 2 minutes).

Notes

For best texture, serve immediately to prevent melting and watering down. Freezing watermelon chunks beforehand can create a thicker texture. Pulse the blender instead of blending continuously to avoid a watery smoothie. Adjust mint quantity to taste. Tajín rim adds a mild spicy, tangy kick; adjust amount to heat preference. Substitute mint extract if fresh mint is unavailable. For a tropical twist, add coconut water instead of plain water when blending.
