  • 2 medium zucchinis, sliced into half-moons (about 4 cups)
  • 1 cup cherry tomatoes, halved (about 150g)
  • 4 cloves garlic, minced or finely chopped
  • ½ cup freshly grated Parmesan cheese (about 50g)
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice (optional)
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • Salt and freshly ground black pepper, to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a sheet pan with parchment paper or lightly grease it.
  2. In a large bowl, combine shrimp, sliced zucchini, and halved cherry tomatoes.
  3. Add minced garlic, olive oil, dried Italian herbs, salt, and pepper. Toss gently until everything is well coated.
  4. Spread the mixture evenly on the sheet pan in a single layer.
  5. Roast in the preheated oven for 10 minutes, watching for shrimp to turn pink and veggies to soften but retain some bite.
  6. Remove the pan and sprinkle grated Parmesan evenly over everything. Add red pepper flakes if using.
  7. Return to the oven and roast for an additional 5 minutes until the Parmesan melts and crisps.
  8. Once done, squeeze fresh lemon juice over the top.
  9. Serve immediately while hot.
